Blackberry ‘Cheese’ Bites
What a great dessert! This easy paleo dessert recipe is the perfect healthy treat for a crowd, dinner parties or just as a snack! Quick and simple no bake dessert that’s ready in no time! Let’s dig in:
For the Blackberry Cheese Bites You Need:
For the Chocolate Crust
- 1 cup almond flour
- ½ cup raw cocoa*
- 6 tbsp pure butter, melted
- 1 ½ tbsp pure honey*
- 1 tsp Summer Day Naturals’ Ground Vanilla Bean
- 1 tbsp. chia seeds (optional)
- A pinch of salt
For the ‘Cheese’ Layer
- 2 cups raw cashews, soaked in water overnight
- 6 tbsp pure butter, melted
- 3 ½ tbsp pure honey*
- 3 tbsp lemon juice
- 1 tsp Summer Day Naturals’ Ground Vanilla Bean
For the Blackberry Puree
- 1 cup blackberries
- 2 tbsp water
- 2 tbsp pure honey*
* You can adjust the amount of honey and cocoa to suit your taste
Instructions:
- Line a square or rectangular spring form baking tin with parchment paper.
- In a bowl, mix together the almond flour, raw cocoa, vanilla bean powder, chia seeds and salt. Stir in the butter and honey and mix until it becomes dough.
- Press the dough onto the prepared tin, making sure the thickness is even, at about 0.5 – 1cm. Set aside.
- To make the cheese layer, drain the cashews and place all the ingredients for the cheese layer into a blender or food processor and blend till smooth, about 1-2 minutes. Make sure to blend properly!
- For the blackberry puree, place the blackberries, water and honey in a saucepan and cook for 8-10 minutes, stirring and mashing them up with a fork. Sieve the cooked mixture and set aside. Discard the leftover solids.
- To assemble: Pour the cheese layer onto prepared chocolate crust and smooth it using a baking spatula. Swirl the blackberry puree over the cheese layer using a spoon.
- Freeze for an hour before serving. Serve with extra blackberries.
