This recipe will give you a little over 2 cups of divine vanilla pudding. You may divide the amount into smaller dishes to feed more people. This pudding is very filling, because all the ingredients are very nutritious.
- Ca 200 ml (about 7 oz) of coconut cream
- Ca 100 ml (about 3.5 oz) of full fat cream (or more coconut cream)
- Ca 100 ml of water
- 2 very ripe bananas
- About 60 ml (1/4 heaped cup/2 oz) of chia seeds
- 2 heaped tsp of Summer Day Naturals’ Vanilla Bean Powder
Put all the ingredients in a blender and blend until smooth. You may add some water, based on the thickness of the cream you use. Divide into your chosen pudding-dishes and refrigerate overnight or a minimum of 4 hours.
